Star dessert

In between finishing off my ‘Nutrition and Entrepreneurship’ assignment and running I’ve been experimenting today with another healthy dessert.

The ingredients today were:

  • Dates
  • Gluten free oats
  • Chia seeds
  • Carob
  • Ground nuts
  • Agave nectar
  • Date syrup
  • Pomegranate seeds

I just blended the ingredients altogether and ended up with a thick paste that I put in to a star mould. Once it was chilled it was easier to turn out and had a flapjack consistency.

  • Chia seeds – A friend of mine introduced me to these and they are packed with antioxidants and omega 3 which is good for heart health
  • Dates – have more potassium than bananas, an essential mineral needed by the body for heathy muscles – a 30g portion of dried fruits count as one of your ‘5 a day’
  • Pomegranate – contain polyphenols that have been shown to be beneficial at slowing the ageing process

Another delicious healthy dessert and a great treat after a long run.
